Here some recipes to start the day:
Cremed Eggs On Toast
(This recipe yields 4 servings)
- 2 cup white sauce (see below)
- 6 boiled eggs
- salt
- toast (I prefer English muffins or sour dough toast)
WHITE SAUCE (Sauce Blanche):
3 tbsp. butter
3 tbsp. flour
2 c. milk
Salt and pepper to taste
Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly. Cook, stirring, about 5 minutes until thickened and smooth. Season to taste with salt and pepper. Makes 2 cups.
French Toast
(This recipe yields 4 servings)
- 1 cup milk
- 4 eggs
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1 dash pepper
- 4 to 6 pieces bread (thick-sliced if you can find it)
Preheat frying pan.
Dip bread into milk mixture and place in hot frying pan.
Pour leftover milk mixture on top of the bread.
Fry on both sides until brown.
Serve with peanut butter (optional) and syrup.
Hashbrownes:
- 4 cups cold cooked potatoes, chopped
- 1 tablespoon minced onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup milk
- 3 tablespoons butter
PREPARATION:
Combine the potatoes, onion, salt, pepper, and milk. Melt butter in a large heavy skillet over medium heat. Do not let burn. When butter is hot, add potato mixture. Press down firmly. Reduce heat and fry slowly until bottom is golden brown. Do not stir. Turn carefully or put under broiler to brown the other side.Serves 4.
